Broccoli-Sausage Macaroni

It’s supposed to be Fall. Right? I mean, here in Southern Indiana, it really doesn’t feel like Fall. We are in desperate need of rain, and we’re still in the mid to upper 80 degree weather! However, the evenings have become a lot cooler. Down in between 55-60. Beautiful nights for some bonfires, if you ask me. In fact, friends are starting to schedule their Fall bonfire parties. Let the potlucks and fires begin! These get togethers are why I love Fall so much. A big part of it anyway. Another reason I love fall, comforting casseroles like this Broccoli-Sausage Macaroni.

Broccoli-Sausage Macaroni is full of delicious flavor, and creamy cheesy goodness. It’s easy to fix, perfect weeknight meal for busy families. With Fall brings school and all those extra activities that come with that like sports. So having a nice comforting filling dish is greatly needed during this time of year.

What I like to do, is I look at my recipe the night before, and see what I can prep ahead of time. For instance, in this recipe, I need to chop a few things up. I’m not exactly a pro with a knife, so chopping things can take some time. I do all my chopping the night before and store them in Ziplocs, or plastic containers. That way, when I get home and I’m ready to start dinner, the time consuming chopping is already done. Just take it out of the fridge, and toss it in the pan, or mixture, or whatever the recipe says to do with it.

For this recipe, it’s real simple. Cook your elbow macaroni (or any short pasta you prefer) according to the package directions. While that’s cooking, steam  your broccoli. I get the packages of frozen steamable broccoli, and do this in the microwave. No extra dishes, you just do it right in the package and it’s quick. Just be sure you buy the packages that are steamable. Then melt some butter in a pan, and saute the onion, bell pepper and sausage until the veggies are crisp tender. Sprinkle a little flour over that, and cook it just for a minute to get that flour taste out. Gradually add your milk, bring that to a boil and cook and stir for about 2 minutes or until it’s thickened. Cut off the heat and add your cheese and seasonings and stir until the cheese is melted. Drain the macaroni and if necessary, the broccoli. Mix the cheese mixture, broccoli and noodles together.

Transfer this creamy deliciousness to a greased 13×9 glass baking dish. The dish is going to be full. If you’re worried about it spilling over in the oven, just set the dish on a foil lined baking sheet and don’t worry about clean up. It’ll be easy peasy! Sprinkle your breadcrumbs and butter mixture over the top, and bake this at at 350 for 25-30 minutes or until heated through.

All that’s left, is to serve this beautiful comforting casserole, and enjoy!

  1. Cook macaroni according to package directions. Meanwhile, steam broccoli according to package directions.
  2. In a large saucepan, saute the onion, sausage and red pepper in 1 tablespoon butter until vegetables are crisp-tender. Sprinkle with flour; stir until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  3. Stir in the cheese, parsley, mustard and seasonings until blended. Drain broccoli and macaroni; stir into cheese sauce. Transfer to a greased 13x9 baking dish (dish will be full).
  4. Combine bread crumbs and butter. Sprinkle over top. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

Susan’s Fabulous Meat Pie

Ok, so you’ve probably seen my post for Dad’s Glop, which is my dad’s take on Goulash basically speaking. This time, I’m bringing you a recipe from my Mom that she shared with me. Her’s didn’t come with a name, but after making it, I decided we would call it Susan’s Fabulous Meat Pie. Although, this isn’t the prettiest dish I’ve ever seen, it is however, big on flavor and tastes FABULOUS! This is an easy weeknight dinner, and it makes a lot, so there’s potential for cooking once and eating twice. I’m a huge fan of leftovers, so this was perfect. To make this even easier, and quicker to put together, you can make the filling ahead of time, and when ready to prepare dinner, just quickly assemble it and pop it in the oven. So let me show you how easy this is.

You’ll need 2 boxes of refrigerated pie crust. There’s two crusts per box. Open the first box, and unroll the first crust starting from the middle of the pan, all the way to edge. Then do the same thing with the second crust, overlapping the first crust, like shown in the photo. Now set that aside.

Moving over to the stove, brown  your ground beef, onion, celery and green pepper until the beef is no longer pink and the veggies are tender. In my Fabulous Meat Pie, I didn’t use ground beef. I have some ground venison in my freezer, so I used two pounds of that instead. You can pretty much use any kind of ground meat you want. Beef, turkey, venison, pork, etc would all work just fine. So use your favorite.

Now all you do is stir in the remaining ingredients, bring it to a boil. Then cover and simmer for about 15 minutes.

Once  your beef mixture has simmered for 15 minutes, spread that over your bottom crust in your casserole dish.

Unroll the last two crusts over the top, just like you did on the bottom, and press and seal, or flute the edges and try to make it prettier than mine. 😂 Cut a few slits in the top to let steam vent and you’re ready for the oven. Bake at 375 degrees for about 35-40 minutes or until the crust is golden brown.

There you have it! A not so attractive pie 😂 but an extremely delicious one! Mine kinda turned out like a Frankenstein pie, but who cares?! I’m not entering it into a contest. Although, if I did, the judges would be blown away by how good this tastes! Let it stand for about 15 minutes before cutting into it, and enjoy!

  1. Preheat oven to 375 degrees. Lightly spray glass 13x9 baking dish with cooking spray.
  2. Roll out one pie pastry starting from the middle of the dish, to the end, then roll out your 2nd pastry from the middle to the opposite end of the dish, overlapping pie crust in the middle. Set aside.
  3. In a large skillet over medium heat, cook ground beef, onions, celery and green pepper until the beef is no longer pink, and the vegetables are tender; drain.
  4. Stir in the remaining ingredients and bring to a boil. Cover and simmer for 15 minutes.
  5. Pour beef mixture over bottom pie crust. Top with remaining two pie crusts just like you did on the bottom. Start in the middle and unroll to one end of dish, and then the unroll last pie crust to the opposite end, overlapping in the middle. Seal crust, and cut a few slits in the top to let steam escape.
  6. Bake in preheated oven for 35-40 minutes, or until the crust is golden brown. Let stand 15 minutes before cutting into squares.
  7. Enjoy!

5 Bean Chili – #SundaySupper

Ok, so how many of you have kids that are just so sick of sandwiches? Or just don’t care for them? OR are just picky?! I happen to have a couple of those, and yet they want so badly to take lunch to school. I can’t blame them, the cafeteria food at their school is just, gross. I tried to come up with a more polite way of saying it, but lets face it, it’s gross. Poor kids don’t even get access to salt & pepper! Savage, right?!

Not to worry! #SundaySupper, along with our gracious host Christie Campbell from A Kitchen Hoor’s Adventures, are here to give you ideas for hot lunches to send your kids to school with. I never thought I could send hot lunches to school with my kids. I don’t know about your kids, but mine do not have access to a microwave while at school. So how do you keep food hot?

You would be amazed at the items available these days, from insulated lunch bags, to insulated containers that go beyond a thermos. Here’s one I really like:

Thermos Foogo – They have other colors besides pink, of course. This is a 10 oz food container, vacuum insulated to keep food hot or cold. It keeps things warm for 5 hours and cold for 7. The outside of the thermos doesn’t get hot, so it’s fine to put it in your lunch bag with cold items. Also, it’s easy to open. This particular one was designed with kids in mind. Yea it’s a thermos, but you can put so much more than just soup in it. Try leftover pasta from the night before, or a real kid favorite like mac & cheese.

Or, how about the recipe I’ve got for you today? This would go perfectly into that cute container, and would stay hot/warm until lunch time. My 5 bean chili! Now, I make my chili on the mild side because that’s just how I roll. My kids appreciate it too, and in fact they love this recipe. Even my bean hater doesn’t mind mom’s chili. It’s so simple too, because I make this in my 6 quart, black, oval Crockpot, and I just LOVE my Crockpot!

First you want to brown up 2 pounds of ground beef along with a bunch of chopped onion. I used two medium onions. As you can already tell, this recipe makes quite a bit of chili. It’s perfect for taking to a potluck, or you can freeze some of it. I have some in the freezer right now.

Once you’ve got the beef all browned up and the onion soft, drain it, if necessary, depending on how lean your meat is. Then just dump it in the slow cooker! The rest of this recipe, is pure dumping.

Drain your 5 cans of beans, and dump those into the slow cooker on top of your beef. I’ve got light red kidney beans, Cannellini beans, black beans, dark red kidney beans, and pinto beans.

Now dump in your 3 cans of Rotel, chili seasoning mixes, tomato sauce, water and salt & pepper. Then mix it up to combine it all real good. Cover, and cook on low for 7-8 hours or on high for 4 hours.

Garnish however you wish. For mine, I went heavy on some low-fat Mexican cheese blend, and a nice dollop of light sour cream. There are a lot of ways we have topped this delicious chili. We’ve used corn bread, fritos, tortilla chips, chopped fresh cilantro, jalapeno slices for those that enjoy a spicy kick. Top it with whatever your favorite toppings are.

Like I mentioned before, this makes a ton of chili, so why not turn leftovers into chili dogs? Or, how about Chili Cheese Burritos? I found that recipe over on Meggan’s blog Culinary Hill. So as you can see this chili is versatile, easy to make, delicious, and perfect for packing into your child’s thermos to take to school for lunch. Add a home made corn muffin, some fruit or a veggie like carrot sticks & celery along with their favorite dip and you’ve got a full and happy kid! It’s time to go beyond sandwiches, and add extra love into the lunch boxes!

  1. In a skillet over medium-high heat, brown ground beef with the onions, breaking up clumps.
  2. Transfer beef mixture to slow cooker.
  3. Add beans, Rotel, seasoning mix, tomato sauce, water and salt and pepper. Stir everything together well. Cover and cook on high setting for 4 hours or on low for 7 to 8 hours.
  4. Ladle into bowls and serve with your favorite toppings and some cornbread.

Simple Ravioli Casserole

Happy Friday everyone!

I don’t know about you guys, but my whole week was full of frustration and technical difficulties, so I’m really really happy it’s Friday. Have you ever heard that song from Brad Paisley called Crushin’ It? Yea, that’s my theme song currently! LOL!

So enough with things being difficult! Lets do something simple! I love simple. If you haven’t figured it out yet, I’m all about simplicity. Keeping things simple, means you don’t have to rush. It means more time with those you love, less stress, and maybe even make space to relax with your feet up while enjoying your favorite wine. So lets keep it simple.

We’ll start with this Simple Ravioli Casserole.  All you need to round out this delicious dish, is a nice crisp green salad, and some crunchy garlic bread. In fact, that’s what I did. I tossed together a quick Caesar salad and baked up some of that garlic Texas toast you find in the freezer section at the store. Talk about simple eh?

First of all, you want to take that frozen ravioli and cook it in a big pot. Which takes almost no time. I mean, seriously. Takes longer to boil the water than to cook these suckers.

Now, spread a little bit of your pasta sauce on the bottom of your 13×9 dish.

Then we simply start layering. Start with half of your ravioli.

Then the rest of the pasta sauce from the first jar, and then sprinkle with some Italian seasoning. Just sprinkle to your own taste.

Spread on the cottage cheese. Oh yea, did I mention that this dish is loaded with cheese? You got the cheese filled ravioli, the cottage cheese, mozzarella cheese and some Parmesan cheese. Cheese cheese everywhere cheese!!! YUM!

Here comes more cheese. Put some of your mozzarella on, and then some of your Parmesan. Now… are you ready for this? Repeat the layers one more time. The rest of your ravioli, all of the pasta sauce from jar #2, Italian seasoning, cottage cheese, mozzarella and Parmesan. Now you’re ready for the oven!

Isn’t she a beauty?! Just about half hour in the oven, uncovered, at 350 and there she is! Let her rest for about 5-10 minutes while you toss together a salad and warm up some bread.

  1. Spread 1/2 cup of pasta sauce in an ungreased 13-in. x 9-in. baking dish.
  2. Layer half of the ravioli on top of the pasta sauce. Then spread remainder of first jar of pasta sauce evenly over the ravioli. Sprinkle pasta sauce with Italian seasoning, to taste. Next spread 1 cup cottage cheese, and 2 cups mozzarella cheese. Sprinkle 1/4 cup Parmesan over mozzarella.
  3. Repeat the layers 1 more time. Ravioli, all of pasta sauce from jar #2, Italian Seasoning, cottage cheese, mozzarella and Parmesan.
  4. Bake, uncovered, at 350° for 30-40 minutes or until bubbly. Let stand for 5-10 minutes before serving.
  5. Yield: 8
Recipe Notes
  • This dish makes a lot and is perfect for potlucks or big families. You can also split it up between two smaller casseroles to bake one now, and freeze the other. To freeze, just assembled casserole up to baking. Wrap tightly in plastic wrap, and then add a layer of heavy duty aluminum foil. Mark and date it, and freeze. When you're ready to eat it, thaw in the fridge, bake as directed.
  • This also reheats really well for lunches the next day.

Meatless Chili Pasta Bake

Hello everyone!

It’s a beautiful Tuesday afternoon here in my little corner of the world in the southern half of Indiana. A bit humid though. I love the sunshine, but the humidity I can do without. I am very grateful for my air conditioning. My kids, however, are enjoying playing in the sprinkler. When they are done, they like to towel off and dry in the sun while eating a Fun Pop. Once spring hits, I always make sure I have a package of those in the freezer.

Enough about my day, lets talk about menu planning for just a minute. Do any of you menu plan? I always work out a menu plan before I make my shopping list, and I work by the week. I also only do dinners. I don’t plan breakfast and lunch. Each individual is on their own for that one. I always have everyone’s favorite things on hand though, so it’s easy for them to find breakfast and lunch.

Do any of you do themed menu planning? I absolutely love doing my planning that way, because I get so bored doing it. I mean lets face it, menu planning and grocery shopping are not really the most enjoyable thing to do. They are tasks and they must be done. But why not have fun with it? If I start getting bored I just change up my theme. I do have some constants though that always seem to make it into the plan somewhere. One of those is a meatless night.

I have discovered that lots of people do “Meatless Monday”. My meatless meal may not fall on a Monday, but it’s the same concept. I’ve also discovered that having at least one meatless meal a week, will save money in groceries. One last thing I’ve noticed, when I make a meatless dish, no one seems to notice or even miss it. How cool is that?!

So that’s what I have for you today, a meatless dish that you’re going to want to add to your menu to try. It’s incredibly budget friendly, and so yummy! My son wolfed it down, and then the kids polished off what was left of it the next day for lunch. I served it alongside some corn bread and a tossed crisp green salad. Easy, quick, cheap, and yummy! What could be better?! Let me show you how easy this is…

First you’re going to cook the pasta according to the package directions. Then drain it, and add it back to the pot. Then mix in your chili, salsa and corn.

Transfer that to a 13×9 casserole dish.

Now sprinkle on the cheese.

All that’s left is to pop it in a 400 degree oven for 25-30 minutes, or until it’s bubbly and the cheese is melted.

  • Pyrex glass 13×9 baking dish – Mine’s blue, and also probably older, but these Pyrex dishes are perfect for just about anything. They don’t absorb food smells or stains, they are dishwasher, refrigerator, microwave & oven safe, and the lid makes taking a dish to a potluck a lot easier!
  • Oxo Good Grips nylon spoon – These are safe for non-stick cookware and also heat resistant up to 400 degrees.
  • Paula Deen cookware – I absolutely love my cookware set. I have had these for quite awhile and still don’t need to replace them. They are very reasonably priced for great cookware.

Baked Bagel Sandwiches

Woah! Slow down! You in a hurry? Well you still have to eat, and if you’re like me, you have to feed your family too. Don’t panic, because I’ve got just the thing! It’s easy, quick, delicious, and best of all, they can be made to each individual’s tastes. I have picky eaters in this house, so finding something everyone  loves is a challenge. There’s always that one person, know what I mean? These also work well for lunches.

Let me introduce you to my version of Baked Bagel Sandwiches. Like I said, these would make an excellent lunch, but I served them for a quick dinner. All you’d need is a quick tossed salad, or maybe some french fries to serve along side it and wham bam! You’ve got yourself a dinner! And because it calls for meats and cheeses you like, everyone ends up happy!

Shh… you hear that? That’s the sound of no one fussing! Doesn’t get better than that! So lets build these right quick. Here we go!

Now, I know my family and I love bold flavors, so I chose the onion bagels. You can use whatever kind of bagel suits you. Although I wouldn’t use any of the sweet variety, that might be a little odd. 😂

So split your bagels and place the bottoms in a 13×9 baking dish. Then add 1 slice of cheese, pile on however much meat you want, then the 2nd slice of cheese, and your bagel tops.

Now take your small bowl an melt your butter in the microwave. Once it’s melted, stir in the horseradish mustard with a fork just to combine it. Now you’re gonna drizzle that over the tops of your bagel sandwiches, cover the dish with aluminum foil, and bake them for about 20-30 minutes. We just want to warm them through and melt that cheese.

That’s it! That’s all there is to it! Now you’re ready to enjoy!

  4. In a small bowl, whisk together melted butter and horseradish mustard. Drizzle over bagel tops.
  5. Cover with aluminum foil and bake for 20-30 minutes until warm throughout and the cheese is melted.

Enchilada Bubble Bake

Mmmm Enchiladas. I can’t get enough of them! It’s one of my favorite flavors, that red enchilada sauce, therefore, one of my favorite Mexican dishes. Enchiladas are easy to make too, in fact I posted my take on some easy enchiladas which I named Awesome Beef Enchiladas. If you missed that, be sure to check it out.

But speaking of simplicity and my obsession with enchiladas, this dish I bring you today is even easier than my Awesome Beef Enchiladas! So if you don’t feel like rolling up tortillas with delicious enchilada fillings, and just wish you could have enchiladas you can just throw in a 13×9 and be done with it, well… your wish is my command!  This is exactly that easy. There is  just one little thing I would like to point out. I used to have a horrible time with dishes like this because it seemed like it would take FOREVER to get the biscuits to cook all the way through and even still, you might find one or two still a little raw in the center. Used to make me NUTS! The secret, make sure your meat mixture is piping hot when you add your biscuit dough to it. This will help those biscuits cook on time, evenly, and completely through.

Enchilada Bubble Bake Yum

  1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  2. In a large skillet, cook beef over medium-high heat, stirring occasionally, until no longer pink. Drain, if necessary.
  3. Meanwhile, separate each can of dough into 10 biscuits. With a knife, or I like to use a pizza cutter, cut each biscuit into quarters.
  4. In large bowl, stir together beef, beans, and enchilada sauce. Add biscuit pieces and toss gently to coat. Spread mixture evenly in baking dish. Sprinkle cheese over top.
  5. Bake 25 to 30 minutes. Let stand 5 minutes before serving.
Recipe Notes
  • You will want to make sure your meat mixture is piping hot when you add your biscuit dough to it. This will help those biscuits cook on time, evenly, and completely through.
  • You can top this delicious casserole with any of your favorite toppings like sour cream and/or guacamole.
  • You could also use ground turkey in this recipe.

Cheesy Broccoli Chicken Casserole

Any recipe that has a name that starts with “Cheesy” will have my full and undivided attention! We love cheese around here. In my opinion, you can NEVER add too much cheese. The more cheese, the better it is. There’s just something about that ooey gooey goodness that is so incredibly comforting. Especially when you add pasta to it

This recipe makes a ton. I’m not gonna lie. 😁 I had enough to feed an army, I’m not kidding. That’s not always a bad thing. There’s nothing wrong with leftovers. I meant I didn’t have to cook the next night and could take the night off. What’s bad about that? Also, since it makes so much, and it’s soooo good you’re going to want to share it, it’s perfect to take to a potluck. Not going to a potluck anytime soon? No big deal, you can turn this one casserole into two separate casseroles and cook one tonight, freeze one for later! I’m a huge fan of cooking ahead and stashing homemade meals in the freezer. They’re better for you than what the freezer section at the grocery store has to offer, they taste better too, and those nights you just don’t feel up to cooking, no problem! Dinner’s already made. Just have to pop it in the oven.  Anyway, lets get on with this recipe so you can go make it for your family.

It’s not a difficult casserole to make, as most casseroles aren’t. First we’ll start with the elbow mac. Cook that according to the package directions until they are al dente (cooked, but firm). While that’s cooking, throw some steamable frozen broccoli in the microwave and cook that according to the package directions, and set aside. While that’s all going on, you can be shredding your cheese.

I bought the sharp cheddar already shredded, so I got to skip that step. I know, I’ve heard it a million times, and people everywhere are saying this, that pre-shredded cheese in the package, do not melt as well as shredding it yourself. I disagree, because I’ve never had that problem. Like ever. Maybe I’m lucky, I doubt that strongly, but hey! Maybe that’s my super power. Pre-shredded cheese melts for me. The only kind of cheese I have found this to be true, is pre-shredded Parmesan. That really doesn’t melt as well as shredding it yourself. So, for the Gouda I had to do myself, and I recommend you do the Parmesan yourself too. Stop and snack a little, it’s ok. Who is going to know?! 😋

If you haven’t already, don’t forget to chop up your chicken.

Now, the best part, making the cheese sauce! Just a little butter and flour, whisked together, and cooked only for a couple short minutes to get that floury taste out. Then slowly add your milk, cream and seasonings, whisking all along the way until it’s nice and thick. Then you add your cheese, handful at a time, whisking until melted. NOW, we get to mix it all together!

Oh man… look at that cheese!!! 😍😍😍 Mix all that yummy together, and spoon it into your prepared 13×9.

Toss your topping ingredients together and sprinkle on top.

Pop that beautiful thing into the oven to bake, 20-25 minutes at 400 degrees. Check it at 20, you don’t want to over cook this or it can dry out. You just want it to be nice and hot and bubbly.

All that’s left is to serve, and enjoy!

  1. Preheat oven to 400 degreees.
  2. Cook macaroni according to package directions. While macaroni is cooking, steam broccoli in microwave according to package directions, set aside.
  3. Melt butter over medium heat in a large saucepan. Whisk in flour and let cook 2 minutes while stirring. Slowly whisk in cream, milk, and seasonings. Cook over medium heat while stirring until thickened. Remove from heat and stir cheeses until melted.
  4. Toss cheese sauce, pasta, broccoli and chicken together. Taste, and adjust seasonings as desired. Pour into a greased 9x13 pan. Combine topping ingredients and sprinkle over macaroni.
  5. Bake 20-25 minutes or just until hot and bubbling. Do not overcook, you don't want it to dry out.
Recipe Notes
  • If you are pre-cooking chicken for the purpose of casseroles, I season my chicken breasts with Garlic Pepper prior to cooking them. You can just salt & pepper them as well, or season to your liking. I do not recommend leaving them unseasoned. The more flavor the merrier!
  • No cooked chicken on hand? No problem! Grab a rotisserie chicken at your local grocery store deli, or check out the freezer section and grab a package of fully cooked grilled chicken breast strips.
  • Freeze Option: You can split this huge casserole into two casseroles. I like to use the throw-away foil baking pans for this purpose. Prep casserole as per directions above up to baking, pour into your aluminum baking pan, wrap with a layer of plastic wrap, then a layer of heavy duty aluminum foil, tightly. Label and freeze. To use frozen casserole, thaw in the fridge. When ready to bake, bake as per directions above.

Jake’s Garlic Lemon Chicken

Hello and happy Friday everyone! I am so excited, and not just because it’s Friday! I’m also excited to be sharing with all of you, the most epic, ridiculously delicious chicken recipe. This is one of my favorite main dishes, and it’s not even my recipe. It’s my husband’s! He’s nice enough to let me share this with all of you.

Jake’s Garlic Lemon Chicken, is the first recipe my husband made for me before we were married. He asked me if I liked garlic. Psh.. duh.. I love garlic! In my opinion, there is no such thing as too much garlic. So, he says “You gotta try my chicken!” I was skeptical, but willing. I didn’t even know he could cook, and when he didn’t whip out a recipe to read from, I was even more shocked! The aroma as this chicken baked was just taunting me. I couldn’t wait to try it. I will never forget that first bite. Ooohhhh man… the most juicy, flavorful chicken I have ever eaten in my life! After all of the laughter he brought me (and still does), making me laugh until my sides hurt, and now this chicken, that was it! I knew I had to marry this man! The kids love this recipe too, in fact, for some reason it hadn’t been made in quite awhile, and when Andrea (my 10 year old) asked if we could have this for dinner, I may or may not have squealed in delight. Pretty sure I did, but we’ll keep that between us mkay?

Hubster is not the measuring type of guy. He’s not even a recipe type of guy. He’s a concoct it in his head type of guy, and it just works really really well. If you don’t like a lot of garlic, then don’t use as much garlic. It’s really just one of those kinds of “recipes”. I don’t want to waste any more of your time, because you’re going to need to go make this for your family ASAP. So lets get to it, shall we?

You’ll want to get your 13×9 glass backing dish out, first thing. Then you’re just going to pour some olive oil in the bottom of the dish, just basically coat the bottom. Then you’re going to place your boneless skinless chicken breasts on top of the oil. As you can see here, our chicken breasts were HUGE. So we only used three, because once we cut those in half, this will feed 6. So use as many or as little chicken breasts as you need. Now take a fork, and pierce the top of the chicken breasts several times. The idea here is to let that lemon juice get into the chicken. Now pour some lemon juice over the chicken. Jake estimates that he probably used about a cup of lemon juice. You really can’t over-do the lemon juice, so just eye-ball it. You want it swimming, as shown below. Then, take about 3-4 large garlic cloves per chicken breast (depending on the size of your chicken breasts), and press it right over the top of the chicken. Spread it out a bit, as my husband says “It’s like a blanket of flavor” LOL. Seriously, if you are not a total serious garlic freak, feel free to cut back on the garlic. My whole household are garlic freaks so… yum! Now, once he has blanketed his chicken breasts with garlic, he seasons to taste using Garlic & Wine Seasoning. This is a seasoning sold by The Melting Pot restaurant, and you can order it online, or if you have local restaurant, stop by and grab some. We always have some in our spice cabinet. You can also substitute garlic pepper as well. Now sprinkle some parsley over the top. All that’s left to do is pop it in a 425 degree oven for 30-35 minutes, or until chicken is no longer pink, and juices run clear.

Grilled Chicken with Balsamic Horseradish Mustard

This chicken recipe is ridiculously good! For such an easy and quick marinade, it gives chicken an amazing flavor. There’s something about the horseradish mustard that my husband and I just love! We use it on sandwiches, and I’ve used it in several recipes. It never seems to fail when using it in a marinade. It helps give that boring chicken a wonderful robust flavor. I put this together in a snap when I got up in the morning, while I waited for my coffee to finish brewing. Then it sat in the fridge all day marinating. When it was dinner time, my own personal Grill Master grilled it to perfection. It’s awesome served with a side of green beans and a fresh tossed green salad.

The unfortunate part? Well, this recipe is part of my Wine Pairing Wednesday post, and apparently I was too busy enjoying the wine, and forgot to snap some pictures of this delicious main dish! The good thing, it just means I have to make it again real soon so I can get the pictures posted. I’m certain no one will complain about eating this again.

Grilled Chicken with Balsamic Horseradish Mustard Yum

  1. Place chicken between two pieces of plastic wrap, and using a rolling pin, or meat pounder, flatten chicken to about 1/2-inch thick.
  2. For the marinade, in a small bowl whisk together horseradish mustard, balsamic vinegar, garlic and thyme. Place chicken into large resealable plastic bags (I put half in one bag, and half in another). Add marinade to chicken in back, seal bag, turn to coat chicken.
  3. Refrigerate for 8 hours or overnight, turning the bag occasionally.
  4. Remove chicken and discard marinade. Grill chicken over medium heat for about 7 minutes. Turn chicken over and grill for 5 - 8 minutes or until chicken is no longer pink.
